Grilled Chicken Sandwich


Nothing beats this Grilled Chicken Sandwich

Let me start off by saying I like healthy eating, but I love great tasting healthy eating 😉  With that said, let’s move on.  The chicken panini from a good friend of mine Chef Ron, is my favorite.  Of course he gave me his recipe- which I will keep a secret…ssshhh

I have used his expertise and created my own version and that one I will give you step by step instructions on how to create 🙂 I know you’re excited.

You will need:

Thinly sliced chicken breast- I used two breast for 4 sandwiches

Multi-grain rolls

Brie Cheese

Baby Arugula


Marinade for chicken

1/4 cup olive oil

1 lemon- juice and some of the zest

1/2 Tbsp dried oregano

1 garlic clove, minced

1 tsp paprika

1 tsp salt

A generous pinch of black pepper


Mix thoroughly pour over chicken breast and let marinade at least one hour.

That was the hard part 😉  Now for the easy part.  You’re only a few minutes from enjoying the world’s best Grilled chicken sandwich. 🙂

Make sure your grill is hot, grill chicken breast 2 minutes per side.

Brush olive oil onto bread and place on grill, make sure you don’t burn rolls.

Slice Brie cheese and place on chicken, now for this part I placed in my toaster oven to melt cheese.

Spread guacamole on inside of roll, place baby arugula on cheese

Close sandwich and savor every tasty bite.
